Quinoa Salad

Ingredient List:

  • 1 cup Quinoa rinsed & drained
  • 2 cups Chicken stock or water
  • 1/2 tsp Salt
  • Fresh Basil
  • 1 Whole tomato - fine diced
  • 1/2 cup Olive Oil
  • Salt & Pepper
  • Optional peas (cooked)
  • Toasted pine nuts or almonds

Directions:

  1. Bring Quinoa & 2 cups chicken stock to a boil, reduce & simmer (covered) 10-15 minutes.
  2. Let cool and add basil, tomato and olive oil.
  3. Salt & Pepper to taste
  4. Chill & serve
