Turkish Eggs - Menemen

Ingredient List:

  • 3 tbsp extra-virgin olive oil
  • 1/2 tsp hot paprika (optional)
  • 1/4 tsp dried oregano (optional)
  • 1 small onion, finely diced (about 2/4 cup)
  • 3/4 cup finely sliced red & green peppers
  • Kosher salt & freshly ground black pepper
  • 1/2 cup chopped fresh ripe peeled tomatoes or drained canned tomatoes
  • 4 eggs, lightly beaten
  • 6 tbsp thick, creamy yogurt
  • 2 garlic cloves, crushed


  • small bunch parsley, roughly chopped
  • minced fresh chives


  1. ​In a medium non-stick or cast iron skillet, heat olive oil over low heat until barely warm
  2. Add paprika, oregano, onion, and peppers
  3. Season with salt and a very generous amount of ground pepper
  4. Cook, stirring frequently, until very soft, about 8 minutes
  5. Add tomatoes & continue to cook, stirring frequently, until deepened in color
  6. Using a wooden spoon, create 4 pockets in the tomato mixture and crack eggs into them, cover the pan and cook the eggs over a low heat until just set
  7. Beat the yogurt with the garlic & season. Sprinkle the Menemen with parsley and serve from the frying pan with a dollop of the garlic flavored yogurt garnished with chives
